After careful quality control, it is time for the first phase of the lyophilization process, which is rapid freezing. This takes place at a temperature that corresponds to the exact critical point. Thanks to this, ice crystals are not formed, which would break the cell walls of the fruit and thus preserve its nutritional content, structure, taste, smell and colour. This is followed by the first slow drying in vacuo. This removes 95% of the water and, if present in the fruit, also removes acetic acid and alcohol. The last phase is the second drying, which is accompanied by a gradual increase in temperature and decrease in vacuum. The result is fragile pieces of dried fruit, which, however, retains the properties of fresh fruit.
