Precise processing
The hardness of the Loft knife blade according to Rockwell is 55-56 HRC. The Rockwell scale indicates the blade' s ability to maintain sharpness over time and evaluates its resistance to mechanical damage and overload. Hard knives retain their sharpness for a long time, but they are also harder to sharpen, less flexible, and more prone to cracking and chipping. Each knife should be strong enough to accurately cut a variety of ingredients, but also flexible enough to resist cracking when changing the cutting angle or applying significant pressure. In most cases, the hardness of kitchen knives is measured from 52 HRC, while 57-58 HRC indicates hard steel.
Knife maintenance
The hardness of the blades of Gerlach kitchen knives has been adjusted to ensure extremely precise and sharp cutting while minimizing the likelihood of the blade breaking during intensive use. To ensure that Gerlach kitchen knives retain their reliability and stylish appearance for as long as possible, it is recommended to wash them by hand. Washing knives in the dishwasher can cause permanent damage to the blades and handles due to the high water temperature and exposure to chemicals.
