I switched from Galaxy Buds pro, a difference of 5 years, which in itself is a big jump. I absolutely adore the Apple ecosystem, the headphones switch between Ipad and Iphone with one press. I wanted to use the Airpods for gaming as well, but I was worried about the long response time due to bluetooth. The reviews on the internet were not very favourable either. To my surprise (I'm no pro gamer), I didn't notice any extra long response for classic on-the-go gaming. I personally am comfortable playing them on both apple devices and Windows PCs.
